Chocolate Chip Zucchini Bread
Ingredients
- 3 cups plain flour
- 1 tsp salt
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp nutmeg
- 3 large eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 tbsp vanilla extract
- 2 cups grated zucchini
- 1 ¼ cups choc chips
Instructions
- Preheat the oven to 180 degrees or 160 degrees fan forced.
- In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
- In a separate bowl, whisk together the eggs, vegetable oil, sugar, and vanilla extract until light and fluffy.
- Fold dry ingredients into the wet ingredients until just combined. Then fold in the grated zucchini and chocolate chips.
- Divide the batter evenly between the cubes, fill up to ⅔ full to prevent overflow when baking. Select two 1-cup or two 2-cup cubes or use one of each.
- It is cooked when a skewer comes out clean once inserted in the centre of the cube. 1-cup cube approx. 35 minutes of baking time. 2-cup tray bake for at least another 10 minutes more (approx. 45 mins).
- Once fully baked, let stand for 10-15 minutes. When cool, flip trays over and gently push out each loaf.
For freezer meal prep:
Once fully cool, pop the lid on the cube and place in freezer. If the bread is too tall for the lid, remove from the cube and place in a freezer safe bag.
