Pesto Sauce
Ingredients
- 2 cups fresh basil leaves, packed (for a milder taste try 1 cup basil leaves, one cup baby spinach)
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts (can use chopped walnuts)
- 1 tsp minced garlic
- 1/4 tsp salt, or more to taste
- 1/8 tsp freshly ground black pepper
Instructions
- Place the basil leaves and pine nuts into the bowl of a food processor and blitz several times.
- Add the garlic and Parmesan and blitz again. Scrape down the sides of the food processor with a silicone spatula.
- While the food processor is running, slowly add the olive oil, stop to scrape down the sides of the food processor intermittently to make sure it is all combined.
- Add salt and freshly ground black pepper to taste.
- Fill freezer cubes to the 1 cup line, pop on lid and its ready to place in the freezer.
- Once frozen solid, you can remove from the cubes and place in a freezer-safe bag.
