Pesto Sauce

Ingredients

  • 2 cups fresh basil leaves, packed (for a milder taste try 1 cup basil leaves, one cup baby spinach)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts (can use chopped walnuts)
  • 1 tsp minced garlic
  • 1/4 tsp salt, or more to taste
  • 1/8 tsp freshly ground black pepper

Instructions

  1. Place the basil leaves and pine nuts into the bowl of a food processor and blitz several times.
  2. Add the garlic and Parmesan and blitz again. Scrape down the sides of the food processor with a silicone spatula.
  3. While the food processor is running, slowly add the olive oil, stop to scrape down the sides of the food processor intermittently to make sure it is all combined.
  4. Add salt and freshly ground black pepper to taste.
  5. Fill freezer cubes to the 1 cup line, pop on lid and its ready to place in the freezer.
  6. Once frozen solid, you can remove from the cubes and place in a freezer-safe bag.
