Sesame Noodles & Miso Dressing

Ingredients

  • 300g Soba noodles
  • 1 cucumber, juvenile
  • 1 small carrot, juvenile
  • 240g shredded red cabbage
  • 1/2 cup cooked chickpeas
  • 240g cooked edamame beans
  • 1 tsp sesame oil
  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish

Miso dressing sauce:

  • 100g rice vinegar
  • 60g tahini
  • 4 tbsp white miso paste
  • 2 tbsp dark soy sauce
  • 2 tsp sesame oil

Instructions

  • In a medium bowl combine all sauce ingredients and whisk together.
  • In a saucepan, cook soba noodles, then drain.
  • Using the same saucepan, cook the edamame beans drain and set aside.
  • Heat a wok over medium heat. Once hot, add chickpeas to the pan and cook until softened. Season with salt and pepper.
  • Evenly split the soba noodles, cucumber, carrots, red cabbage, and chickpeas into 4 of the large section compartments of the meal prep containers. Pour the dressing into the smallest compartment and edamame beans in the other. Garnish the soba noodles with spring onions and the miso sauce with sesame seeds.
  • Stack in the fridge to go.
